3 Flour Chocolate Chip Cookies

THURSDAY THOUGHTS 

Don’t have much time since I have family here from out of town, BUT, I thought that on this fine thoughtful Thursday that I could take a few minutes to share my new taste bud teasing 3 FLOUR CHOCOLATE CHIP COOKIE RECIPE.  It’s a unique recipe I came up with on my own, since I couldn’t find one anywhere that uses both almond flour (low carb! healthy fat!) and coconut flour (protein! fiber!). I also figured I’d throw some whole wheat flour in just for kicks (and for some oomph in texture), which makes them quite wholesome, to boot!


3 Flour Chocolate Chip Cookies

Preheat oven to 325Ā°F
Ingredients
3/4 C almond flour (or meal)
2/3 C whole wheat flour
1/4 C coconut flour
1/2 tsp baking soda
1/2 tsp salt
1/2 C butter (1 cube)
2/3 C brown sugar (or 1/3 white & 1/3 brown)
1 large egg
1 T vanilla
1 C semi-sweet chocolate chips

Instructions
1.  Beat sugar & butter until smooth
2. Add egg & vanilla; beat until combined
3. Add dry ingredients and beat until combined
4. Fold in chocolate chips
5. Form into balls, spoon onto baking sheet (preferably lined with parchment), and slightly flatten tops
 6. Bake at 325 for 8-10 min 
(do not overbake!)
7. Devour while still warm šŸ™‚

These cookies have some heft! Quite satisfying šŸ™‚

 NOTE: To make these gluten free, simply replace the wheat flour with brown rice flour, more almond meal, etc.
